Lord Inquisitor has his Daemon Hunters/Witch Hunters army lists where the Grey Knights stats are detailed. I think he's updating them at the moment though. I'll see if I can find the link......

That list is pretty good, although it lacks a little bit of character in my opinon (although I know others prefer a tight list to "character"!) Some of the points values do look a little suspect off the bat, although I do note they dealt with Holocaust the same way I decided to in the end.
