In terms of blitz protection the best unit Tau have is the piranha. Although you don't really need to be all that concerned with Blitz protection with Tau as the army is full of 30cm+ Skimmers.

Also be careful with thinking about holding territory when playing Tau. They are not particularly useful in FF's so approaching a game with this mindset can be very problematic. Instead think of the Tau in terms of a fluid going around hard formations and not necessarily engaging them head on. In epic you don't need to destroy the large scary formations to win the game. When playing Tau you are usually better off simply minimizing their impact on the end game and maintaining a healthy activation advantage.

One last piece of advice, I would reconsider attaching pathfinders to a FW formation. They don't necessarily add more than a base FW unit so long as the formation has a devilfish attached and you are paying a premium for them. The points may be better spent elsewhere.

Thanks for the advice Jstr19, the Pathfinders are only with the FWs to add their markerlights. One thing I have learnt from this post is that Tau have a little more flexibility then i initially thought they had, in terms of list/play style. I look forward to trying them out.

The FW formations already have skyrays which will provide MLs for them

Sorry I meant to say skyray not devilfish in my earlier post and was trying to point out what Steve54 said. If you have a Skyray why take pathfinders? My mind is on other things ATM.

That's ok Jstr19, we all have times like that. I realise that the Skyray will provide me with AA cover and markerlight goodness what a great package. Plus the OM minis look great. I'm going to throw these into more units.
