I've seen plenty of tips on how to use Eldar to kick everyone else's ass, but little on defeating the Eldar themselves. I have a few ideas myself, but has anyone else got any pearls of wisdom?

In short Weapon Batteries in masses plus some fast escorts to catch the pointy eared gits!

Yup. and Eldar use aconites here! 
Against eldar, anything with weapon batteries is the way to go. Especially if they are long ranged (45+ cm) since then they have the reach to get to those pesky gits. Other weapon systems are not as good, but they can be useful in placing BM in contact with the eldars. Just make sure that they cannot move out of your firing zone (asteroids et al) ansd it should be fine.

I take Dark Eldar against Corsair Eldar which typically favors Dark eldar since even if you dont have enough battery escorts to match your wants- every ship they have has batteries to some degree.
Otherwise: Tau: Tolku Heros, lots and lots of bombers (explorers) and some defenders/orcas- or if you like the FW stuff take plenty of Castellans. Demiurg are also good.
Necrons: Scythes can cause serious problems for Eldar
Orks: shut up and die like orky boyz
SM: Lots and lots of Gladius frigates.
Nids: I honestly don't know- I would imagine that Kraken with pyro acid is quite effective.
Main issue with facing the Eldar is that if the player controlling them is worth his salt it will nearly be impossible for you to corner him, and add to that the sheer mobility they possess means you really can't plan on them being in any place for long so many attack decisions would have to be made on the fly especially in a terrain heavy battlefield. If the Eldar don't want to get caught- odds are they won't get caught and only the Necrons have a chance of catching them.

Xavi & Black horizon: Aye, WB's are the weapons of choice, but my problem usually arises with their annoying ability to move wherever they like. Catching them is what gets my goat. Zhai: You'd be surprised just how good nids are against them, I watched a voidstalker get scrapped by 4 kraken in 1 round of shooting, not just by the initial damage but the resultant fires from pyro acid - nasty! Unfortunately I'm usually a Navy player, so no lovely pyro-acid. I've tried orbital mines against Eldar, but they're worse than useless (cant catch them, though if I did, they'd be stuffed). On the flipside, orbital mines are fantastic against nids though...

Escorts are your friends, then. Even the lowly cobra. You need to 1) put blast markers around and 2) catch them up and shot the hell out of them. Sword work good for the second point, and cobras can fill both roles, since exploded torps will put BM around. NC ships will also help here, since the NCis bound to put a lot of BM on the eldar ships.
I play chaos, so I tend to reply in my long range cruisers, but in your case escorts might be a better option. BC might help as well, but they are rather expensive for what you get in this case (IN BC get a lot of lances, generally)
Blackhorizon suggested emperors and swords. I never thouight about the emperor in this area, but it looks like a nice area dominance ship. The sword helps in diging the fairies out of their holes and kicking them in the crotch with a baseball bat.

In my opinion the Emperor is one of the best anti-Eldar ships in the game! Long ranged 60cm weapon batteries, lots of them, and protective ordnance to intercept the nasty Nightshade torpedoes.

Cheers folks, reckon I'll have to add an Emperor class to my burgeoning fleet inventory. My poor Apocalypse isnt much good against the space fairies, though it is a beast.
